Sensory Opinion and Structured Measurement

Learning outcomes

After studying this subject, the learner will be able to:

  • distinguish personal impression, professional observation, and structured measurement;
  • convert sensory description into a recordable and comparable variable;
  • select an appropriate scale for each adjudicative question;
  • prevent confusion between attribute intensity and dish quality;
  • calibrate terminology before a session; and
  • design a test showing how structure reduces ambiguity.

Opinion is not error and measurement is not removal of humanity

Tasting begins with human perception. A judge may experience pleasure, dislike, or surprise before professional interpretation begins. CAMS does not reject that response; it places it correctly. Personal impression describes the taster’s relationship with the dish. Professional observation describes a perceived property. Structured measurement connects that property to a definition, scale, conditions, and record.

“The dish is strong” may refer to high salinity, intense aroma, hot spice, dark color, or long persistence. If each judge uses the word differently, verbal agreement conceals measurement of different attributes. Measurement therefore begins by defining the attribute before assigning a number.

From impression to measurement

The transition contains five stages:

  • identify what was perceived without a global judgment;
  • name the attribute through an operational definition;
  • select a scale matching the question;
  • fix comparison conditions; and
  • preserve value, source, and time.
Structured Measure = Defined Attribute + Scale + Conditions + Source + Record

Without definition, the number labels an ambiguity. Without a scale, distance among values is unknown. Without conditions, difference cannot be interpreted. Without source and record, traceability is lost.

Attribute intensity and execution quality

A common error is equating attribute intensity with quality. A judge may register salinity intensity of eight on a zero-to-ten scale. This does not mean the dish quality is eight out of ten. High salinity may be intentional in a preserved product and defective in a delicate soup.

Two separate fields are therefore used:

  • Intensity scale: How strongly was the attribute perceived?
  • Appropriateness scale: How suitable was that intensity for the identity and purpose of the dish?

Separation prevents personal preference for a particular intensity from becoming a universal quality rule.

Properties of a sound scale

A professional scale requires:

  • clear minimum and maximum;
  • descriptive anchors at important points;
  • stable direction;
  • understandable distance among values;
  • reference-sample training when the sensory attribute is subtle; and
  • a prior rule concerning fractions or half-points.

A longer scale is not automatically better. A hundred-point scale may imply precision the judge cannot reproduce. CAMS selects scale length according to demonstrated discrimination and consistency, not ceremonial appearance.

Shared sensory language

A short language calibration precedes the session. Its purpose is not to make judges like the same things. It makes a term refer to the same phenomenon. Reference descriptions are established for bitterness, acidity, dryness, crispness, balance, and persistence, then retained in the session guide.

If a new expression appears during judging, it is preserved as written. After the session, related descriptions may be mapped into the institutional glossary while the original text remains intact.

Mind map

Worked example

Three judges tasted a soup and wrote “far too salty,” “strong,” and “unbalanced.” The statements cannot be directly compared. Following use of the session glossary and two separate scales, the following values were recorded:

The data show that different words referred to a similar phenomenon: high intensity and low appropriateness. Apparent disagreement becomes comparable without erasing each judge’s language.

Applied laboratory: intensity versus quality

Purpose

Train the learner to measure sensory intensity independently of quality judgment or preference.

Procedure

  • Prepare three samples from one base with controlled salt concentrations.
  • Present samples blind and in randomized order.
  • Register salinity intensity on a zero-to-ten scale.
  • After intensity closure, disclose dish type and purpose.
  • Register salinity appropriateness on an independent scale.
  • Compare intensity ranking before quality discussion.

Analytical questions

  • Did the learner rank samples according to actual concentration?
  • Did appropriateness change after dish identity was known?
  • Was the intensity scale used as a personal preference scale?
  • Which words require greater precision in the session glossary?

Practical assessment

The learner receives ten general judging statements and converts each into a defined observation, variable, scale, and recording condition. A compact card must then be designed to prevent intensity and appropriateness from being mixed.

Opinion does not disappear; its location inside a broader professional decision becomes known.
